Overwhelmed With Joy is asking for holiday recipes. Here’s one of my favorite desserts, Leche Flan.
The recipe serves 8 to 10 people. If I’m not in the mood, I could eat the whole flan in one serving. If I am in the mood, I’d nag my wife to bake some more.
Caramel
1 cup sugar
¼ cup water
Caramelize sugar in a saucepan. Do so by boiling sugar in water, stirring continuously until it turns golden brown.
Pour caramel into a 2-inch deep mold or dish. Make sure the whole surface is covered.
Custard
12 egg yolks
2 13-ounce can evaporated milk
1 14-ounce can sweetened condensed milk
1 teaspoon vanilla
Preheat oven to 350 F.
Lightly stir all ingredients in a large bowl. The idea is to mix the ingredients without forming bubbles or foam.
Slowly pour mix into the caramel-lined mold or dish. Strain if you must.
Cover mold or dish with aluminum foil.
Place mold or dish in a larger pan filled with water. The idea is to let boiling water bake the custard.
Bake in oven for an hour. Make sure the custard is firm.
Cool before unmolding into a platter.

I've never tried to make flan before, but I may try it now with your recipe.

I LOVE flan, and I usually make it but not this version, will have to give it a try.
Anything with condensed milk is a must for me :)

Now, why is it that I hate Flan? Maybe I should give it another try... I think it's the texture...
